When the weather gets cold in Holland, rookworst is what everyone craves. It is the heart and soul of traditional Dutch winter cooking, most famously served alongside stamppot.

This is a heavily smoked, plump sausage with a very satisfying snap when you bite into it. The meat is juicy, deeply savory, and carries a strong, natural wood-smoke flavor.

Warm it gently in hot (but not boiling) water to preserve its juiciness. Slice it thick and serve it over a massive mound of mashed potatoes and kale, or eat it straight from a crusty bun.
